This Asolo Prosecco DOCG “Col Fondo” comes from the desire to rediscover the old tradition of father Emilio in producing Prosecco. From the selection of the grapes in our oldest vineyard and from the maceration on peel for 18 hours, a base wine with a strong personality and minerality is born. Then follows the refermentation in the bottle according to the classic method, but without disgorgement. The presence of the yeast in the bottom of the bottle is an indication of genuineness and wholesomeness. The “Col Fondo” is pure expression of the territory at the tasting level: a mix of flowers, yellow fruit and bread crust on the nose with a deep mineral sensation in the mouth. It is advisable to slowly invert the bottle 2-3 times before uncorking.
It should be served at a temperature of 8-10 °.

This Extra Brut sparkling wine is produced with the best Chardonnay and Pinot Noir grapes coming from vineyards located in the Veneto region in the hilly area of Montello and the Asolo hills, in the municipality of Nervesa della Battaglia and more specifically from the Abbazia estate vineyard located on the Montello slopes. Colour: Straw yellow. Bouquet: Intense, fruity, with hints of apple, bread crust and yeast. Flavour: Good acid note as well as being creamy and round on the palate. Food pairings: Excellent both as an aperitif and as an accompaniment for all important occasions.
