Benjamin Bridge Nova 7

Cave Spring Blanc De Blancs

This is a brilliant example of Ontario’s prowess with sparkling wine. An elegant traditional-method Chardonnay that delivers great depth of apple, pear and bread tones in a crisp, long package. In 2012, Cave Spring was awarded a Lieutenant Governor’s Award for their Blanc de Blancs Brut Sparkling. Perfect for lobster, grilled seafood, or sushi.

Chiarli Lambrusco Castelvetro

Lambrusco is a specialty of Italy’s Emilia-Romagna region, where this lightly sweet and sparkling red accompanies cured meats, rich pasta and flavourful cheeses. Deep purple in colour, with a sweet grapey, black plum, blood orange and spice aroma and flavours. A subtle herbal edge on the finish provides balance.

Cinzano Prosecco

Col Fondo Asolo Prosecco DOCG

This Asolo Prosecco DOCG “Col Fondo” comes from the desire to rediscover the old tradition of father Emilio in producing Prosecco. From the selection of the grapes in our oldest vineyard and from the maceration on peel for 18 hours, a base wine with a strong personality and minerality is born. Then follows the refermentation in the bottle according to the classic method, but without disgorgement. The presence of the yeast in the bottom of the bottle is an indication of genuineness and wholesomeness. The “Col Fondo” is pure expression of the territory at the tasting level: a mix of flowers, yellow fruit and bread crust on the nose with a deep mineral sensation in the mouth. It is advisable to slowly invert the bottle 2-3 times before uncorking.
It should be served at a temperature of 8-10 °.

Cune Cava Brut

You can expect a delightful fizz from this Sparkling wine as well as a balance and acidity that is the hallmark of Cune. It has an appealing fresh fruit nose with a yeasty/almond undertone. The palate is creamy and bright with nutty, green apple fruit and a mostly dry finish.

Cuvee Catharine Rose Brut

Named in memory of Henry’s wife, widow, and family matriarch, Catharine Smith, this wine is composed from the traditional grape varieties of Pinot Noir and Chardonnay to make a Niagara expression of a time honoured wine style. The secondary fermentation is done in-bottle and the wine is aged for up to 24 months on the lees. Perfumed, round, and berry-toned. All grapes are farmed by family-owned vineyards.

Dominio De Tharsys Cava Rose

The nose emphasises the intense aroma of red fruits like strawberries and raspberries with slight touches of aromatic herbs. This Cava has a delicate and creamy taste with a nice silky sensation of a refreshing flavours which remind of Granny Smith apples.
