Bollinger Special Cuvee Brut

Disgorged in the second half of 2019, the latest release of Bollinger’s NV Brut Special Cuvée is based on the 2015 vintage, complemented by around 60% reserve wines. The wine is still quite tightly wound after its recent disgorgement, opening in the glass with notes of crisp yellow orchard fruit, freshly baked bread, clear honey and orange peel, with little sign of the nuttiness to come with bottle age. On the palate, it’s medium to full-bodied, muscular and incipiently textural, with a deep core, ripe acids and a pinpoint mousse. This isn’t the most incisive vintage of Special Cuvée, but it’s powerful and vinous and will have fine gastronomic potential with a little bottle age.

Gérard Bertrand Côte des Roses Rosé

A soft, pale, brilliant pink with bluish tints developing over time towards more orangey nuances. The bouquet releases aromas of summer fruits, cassis and redcurrant. Floral notes of rose along with hints of grapefruit complete the picture. The finish is fresh, offering notes of candy. On the palate the impression is fresh and full, with great aromatic persistence and balance.

Manzane Prosecco Superiore Brut DOCG

Bright straw colour, fine perlage, delicate fruity aroma with hints of bread crust, with floral nuance.

Soft pressing of grapes, cold settling of the must (5-7°C) and start the fermentation at controlled temperature of 16/18°C. Next stop on the yeasts for 3 months. Paradigm 2017 Merlot Oakville Napa Valley

Ruby red color with aromas of red plums and cherry fruit layered with hints of toasty French Oak. Some dried spices in the nose as well, cardamom and five spice. Very soft and supple across the palate with red fruit character dominating the flavor profile. Barely there silky tannins add structure and texture without heaviness. Balance and length are good with persistent flavors lasting several minutes.

A rich, smooth red wine, showing plum and dried fruit notes, produced from late-harvested Merlot, about 60%, and Corvina grapes. When the grapes are ripe, the bunches are partially cut from the vines; hanging in the warm autumn air the grapes dry, concentrating the juice within and giving rise to the finished wine’s fruit character. Added notes of spice and vanilla come from a brief period of oak ageing.
