Adobe Road Cabernet Sauvignon Knights Valley, Bavarian Lion Vineyard

Knights Valley is one of our favorite places for Bordeaux varieties – the climate is just right. Because the berries are so small and skins so thick, this cabernet is a favorite for extended time in tank post-fermentation. This technique helps integrate tannins and fruit, and sets the stage for a balanced and long-lived wine.

Dark cherries, ripe black fig, violets, and wet stone all lead off the aromas of this powerful Cabernet. Dense, round tannins frame fresh blackberry, anise, and graphite on the palate. Delicious now, and will age gracefully for at least a decade.
