The grapes are carefully selected and separated from their stalks in the winery, they are then gently crushed. The fresh must is left on the skins for approximately 8 hours at a controlled temperature. 5% of Merlot grapes are added in order to achieve the special pink hue of this wine. After soft-pressing the must is left to ferment at a temperature between 15-17°C and then stored at 17-18°C in special stainless steel tanks until bottling to ensure absolute freshness.
