This maturation is very nicely balanced with evident, but subtle, notes from the Pedro Ximenez sherry – a generally very dark, sweet, oily, dessert style sherry. This does not outshine the bourbon cask influence leaving us with a PX sherry finish rather than it dominating the overall dram.
Nose-Treacle, ginger cake, toffee sauce, sticky toffee pudding.
Palate-Caramelised apple, toffee apples, strawberries, burnt toast.
Finish-Slight hoppy note, red fruits, cherry pie.
