With the Private Edition series, we give free rein to the imagination of our whisky creators and invite whisky aficionados to explore our passion for experimentation. For the tenth anniversary we are delighted to share Glenmorangie Allta, a rich and fruity expression owing its depth of flavour to wild yeast.
Acclaimed whisky writer Michael Jackson once wrote about the unique “house” yeast he believed Glenmorangie possessed. Inspired, Dr Bill Lumsden, Glenmorangie’s Director of Distilling, Whisky Creation & Whisky Stocks, went on explore this idea. He discovered a strain of wild yeast growing on our own Cadboll barley which went on to form the backbone of Glenmorangie Allta.
Having discovered a strain of wild yeast that had never been identified before, we reunited it in the whisky-making process with local Cadboll barley. The resulting spirit, noted for its exceptional fragrance, is then matured in ex-bourbon barrels to highlight its fruity character and lend a rich creaminess to the whisky.
