Production Notes
Both lots were trucked directly to the winery in half ton bins and sent directly to press upon arrival to the winery. Gently pressed juice was pumped into stainless steel tanks and allowed to begin a natural fermentation with native yeasts. The grape pomace was collected and hauled offsite to be utilized as fertilizer and bio-fuel. Upon completion of fermentation, 10% of the wine was sent to small neutral French barriques with the remainder staying in tank for an elevage of seven months. The wine was finally blended and bottled, unfined and unflitered, on June 1, 2023 with minimal SO2.

Winemaker Notes
We night harvested three and a half tons of Sauvignon Blanc by hand on August 18th from the Geneseo zone and an additional four tons of Sauv Blanc on September 1st from the El Pomar area of Paso Robles. The rolling terraces of the Geneseo zone are made up of silty clay and clay loam with some decomposed calcareous to low nutrient levels providing complex flavor profiles. El Pomar has shaly loam soils made up of calcareous fragments and secondary lime deposits resulting in moderately alkaline soils that grow grapes with great natural acidity.
