Mezcal Unión El Viejo is a clear, silver-hued mezcal produced by a union of Oaxacan families under the guidance of Master Mezcalero Pedro Hernandez.
Under the Unión label, various producer families contribute to individual, hand-crafted batches of Unión mezcal. El Viejo, “the old man,” is the elder and rarer counterpart to its younger sibling, Unión’s “young man,” Uno.
El Viejo is created from two types of agave—farm-raised sprat (also known as espadín), and tobalá, a wild bush known as King Agave. Tobalá is only found at high altitudes, matures for up to 14 years, and can generally only be located on foot or by donkey.
