Beldorney 23 Year Old 1997 – The Octave (Duncan Taylor) (53% abv) 

Another marvellous release from Duncan Taylor’s Octave series, which sees whiskies finished in a tiny octave cask. This particular expression is a 23 year old Beldorney blended malt (people who know a thing or two about teaspooned malts might recognise that name…), which was finished in an octave for six months. Just 84 bottles were released. Master of Malts

Glenburgie 21 Year Old 1997 (cask 12572) – Old Particular (51.5% abv)

The Old Particular Glenburgie 21 years old 1997 is an older Speyside single malt from the Glenburgie distillery bottled in the Old Particular series by the independent bottler Douglas Laing. This Glenburgie was distilled in June 1997 and matured in sherry butt. It was bottled in June 2018 at 51.5% ABV, non chill filtered and with no added colour. This is a limited single cask release of 607 bottles.

Deep bright, ruby red colour. Attractive bouquet with concentrated super-ripe cherries and baked plum aromas. Characteristic cherries in spirit flavours on the palate with marked impressions of typical “illusions of sweetness”. Very long finish with hints of cocoa and vanilla and a slight touch of tobacco.

Ideal with red meats, game, quail, roasts, and other richly-flavoured dishes. Excellent paired with strong cheeses (such as parmesan, pecorino etc.). A noble after-dinner wine. Recommended drinking temperature 18° C (64° F).

Nose: Vanilla and honey sweetness, with gentle peach and stewed apple

Palate: Oily and smooth, showing gentle sweetness, tropical and orchard fruits, with baking spices and cedar rounding out a very approachable profile

Finish: Medium length, the vanilla stays alongside more ripe fruits and spice

The first impression is of pungent black fruit aromas and rich dark velvety chocolate. This is then followed by delicate herbal and tobacco notes. The complexity and range of flavours on the palate are seemingly endless: rich cherry and plum jam, luscious ripe blueberry, bitter dark chocolate, scented cigar box and spice, fresh leather. And the texture and consistency of the wine is almost of molasses, or treacle, it coats the palate like a velvet glove. A wine with enormous strength, marvellous depth, dimension and structure. It fills the mouth to bursting and the finish is wonderfully prolonged.
