Mezcal Margarita

Mezcal is a smoky, earthy agave spirit that has exploded in popularity in the last year. The flavour profile comes from the traditional roasting method; where agave is cooked in underground pits filled with hot coals. This is the main difference between Mezcals and Tequilas as the agave processing techniques vary greatly in Tequila production (although all tequila's are technically mezcals produced in the Tequila region of Jalisco!)
There are different varieties of Mezcal but the most common in the global market is Oaxacan (region) espadín (agave varietal).
