In this second installment Pete will be taking you through one of the most fundamental aspects of whisky production – maturation. Together we will review the extensive spectrum of flavour profiles and characteristics that the cask can impart on single malt spirit. We will discuss the importance of aging, as well as maturation conditions, cask quality and the pairing of wood and spirit. This will be illustrated by an exceptional, curated line up of whiskies, each showcasing different styles and characteristics of the maturation process.
