10 mint leaves muddled with 1/2 oz simple syrup
Top with tonic or soda (preference)

Fill a highball glass with ice cubes and add the first 3 ingredients and stir before topping with chilled Prosecco.

.75oz lemon juice
.5oz honey
Shake ingredients together with ice. Strain and serve in a
coupe glass. Garnish with a twist of lemon peel.
