“Quotidien” translates as “daily ration” and this wine is inspired by our love for affordable, accessible everyday bubbles. This wine is straightforward refreshment at its finest, with bright and invigorating acidity, inviting notes of orchard fruit and blossoms, and a quenching citrus-tinged finish. This vintage is a blend of 3 varietals sourced from 3 different vineyards, each picked and pressed separately, but each settled 48 hours in tank before being racked off heavy lees. The Chardonnay was fermented in both neutral oak and stainless steel, the Riesling and Viognier were fermented in 100% stainless steel. The 3 varietals were all fermented separately using different commercial yeasts chosen to showcase varietal specific aromatics. Once fermentations finished the wines were left to age on fine lees for 4 months before being blended together and carbonated.
