Dom Gautheron Chablis Vielles Vignes

The family manages their 30ha of vineyards in the method of “Lutte raisonnée” or supervised control (a mashup of organic and bio-dynamic) management with little or no chemical interventions. Now into their 7th generation they own and produce all levels of Chablis. Fermentation is all in stainless steel and on occasion a small amount may be held in neutral oak for a short period. The Vieilles Vignes combines chalk and lemon in the nose, with bright clear notes and a touch of herbs. The mouth is precise, elegant, and pure, with notes of lime rind, saline, and dry Chardonnay fruit.
