Domaine Boussey is a 5 generation winery in Monthelie, near the villages of Meursault Pommard and Beaune, they produce both red and White burgundy.
The vinification in White begins with a soft pressing of grapes resulting from Chardonnay, followed by a low-temperature fermentation during several days in order to obtain the fruity and the sensual delight of Grands Blancs of Burgundy.
These wines will be high out in oak barrels during 12 months, with proportions of new barrel varying from 10 to 50%.
Selection of our oldest vines, on calcareous soil, at Meurgers, les Forges, which gives very balanced white wines and with good conservztion (6 to 12 years) its scent evokes roasted almond and hazelnut, fern, verbena ou minerality, lingering taste. The Meursault Vieilles Vignes is to be rather drunk with foie gras, white meats, lobster.
