This Asolo Prosecco DOCG Col Fondo comes from the desire to rediscover the old tradition of father Emilio in producing Prosecco. From the selection of the grapes in our oldest vineyard and from the maceration on peel for 18 hours, a base wine with a strong personality and minerality is born. Then follows the refermentation in the bottle according to the classic method, but without disgorgement. The presence of the yeast in the bottom of the bottle is an indication of genuineness and wholesomeness. The Col Fondo is pure expression of the territory at the tasting level: a mix of flowers, yellow fruit and bread crust on the nose with a deep mineral sensation in the mouth. It is advisable to slowly invert the bottle 2-3 times before uncorking.It should be served at a temperature of 8-10 °.
