Dassai is produced by Asahi Shuzo Brewery in Yamaguchi Prefecture, Japan, a brewery renowned for its singular focus on premium junmai daiginjo sake production. Widely regarded as one of the most influential modern sake producers, Dassai has earned global recognition for combining traditional brewing artistry with advanced technology and meticulous quality control.

The “45” designation refers to the rice polishing ratio, meaning each grain of rice is milled down to 45% of its original size before brewing. This extensive polishing removes outer layers of the rice that contain fats and proteins, helping create a cleaner, more aromatic, and more elegant sake profile.

Crafted using premium Yamada Nishiki rice — considered Japan’s most prized sake rice — Dassai “45” emphasizes purity, precision, and balance. Fermentation takes place at low temperatures over an extended period to encourage delicate aromatics and layered complexity while preserving freshness and finesse.
