Derrumbes is a mezcal project focused on showcasing the diversity of mezcal across different regions of Mexico, with each bottling reflecting the distinct terroir, agave species, and production traditions of its origin. The Guerrero expression is particularly notable for its coastal influence and use of locally grown agave, often Espadín or regional variants.
Unlike many Oaxacan mezcals, Guerrero mezcal production often involves unique techniques, including distillation in Filipino-style stills or adaptations of traditional methods. Agave is typically roasted in earthen pits, then crushed and naturally fermented before distillation. The 2024 release continues this regional focus, offering a profile shaped by local climate, soils, and artisanal practices.
As a joven mezcal, it is bottled unaged, preserving the raw expression of agave, smoke, and fermentation character.

Tasting Notes
Colour: Clear
Nose: Aromas of roasted agave, light smoke, tropical fruit, and herbal notes, with hints of citrus and saline minerality
Palate: Medium-bodied, with flavours of smoky agave, green herbs, citrus, and subtle fruit sweetness, supported by mineral and slightly briny undertones
Finish: Clean and persistent, with lingering smoke, citrus, and a lightly savoury, coastal character

Cellaring & Pairings
Does not require cellaring; stable in bottle when stored upright and away from light and temperature fluctuations.
Best enjoyed neat to appreciate its regional nuances. Pairs well with seafood, ceviche, grilled fish, tacos, and dishes with citrus, spice, or fresh herbs.
