Penelope Toasted Series Bourbon

enelope Toasted Series Bourbon takes fully matured straight bourbon and gives it a secondary finish in a new hand-toasted barrel. The current standard expression is bottled non-chill filtered at 50% ABV / 100 proof and uses a mash bill of 75% corn, 21% rye and 4% malted barley.

The Toasted Series was built around the idea that changes in toast and char can produce noticeably different results. Earlier releases explored multiple toast and char combinations, while the current bottling is identified as Char 5 / Heavy Toast.

Tasting Notes
