Gamay Noir thrives in Niagara’s cool-climate conditions, where moderate temperatures and a long growing season allow for slow ripening and the development of bright aromatics and natural acidity. “Night Moves” reflects a modern, fresh style of Gamay, often crafted with gentle extraction and minimal oak influence to preserve fruit purity.

Fermentation is typically carried out in stainless steel, sometimes with partial whole-cluster inclusion to enhance aromatics and structure. The result is a lively, fruit-forward wine with a focus on drinkability.
