Winery & Winemaking Overview
Simonnet-Febvre, founded in 1840, is a historic producer based in Chablis, Burgundy. The house is known for both still and sparkling wines, with a strong focus on expressing the distinct terroir of Chablis through classic, restrained winemaking.
Chablis is defined by its Kimmeridgian limestone soils, rich in marine fossils, which contribute to the wine’s characteristic minerality and freshness. Grapes are typically sourced from vineyards across the appellation, benefiting from a cool climate that preserves acidity and promotes slow, even ripening.
Fermentation is generally carried out in stainless steel to maintain purity and clarity, with little to no oak influence. Lees ageing may be used to add subtle texture while preserving the wine’s linear, mineral-driven profile.

Tasting Notes
Colour: Pale straw with green reflections
Nose: Fresh and precise, with aromas of green apple, lemon, and citrus zest, alongside flinty and mineral notes
Palate: Light- to medium-bodied, with crisp acidity and flavours of citrus, orchard fruit, and pronounced minerality
Finish: Clean and focused, with lingering citrus and a distinct saline, mineral edge

Cellaring & Pairings
Best enjoyed within 3–5 years of vintage, though it may develop additional complexity with short-term ageing.
Pairs well with oysters, shellfish, and seafood, as well as light poultry dishes and fresh cheeses. Also complements dishes with citrus, herbs, and delicate flavours.
