That Boutique-y Whisky Company Copperworks B2 3 Year Old

It’s a welcome return for Seattle’s Copperworks Distillery with another 3 Year Old Single Malt Whiskey. Copperworks are thought leaders in cementing American Single Malt as a category in the USA. In 2018 The American Distilling Institute named them Craft Distillery of the Year. We’ve bottled this at natural cask strength and filled just 275 bottles. When the founders came together to start their distillery, they wanted to make whiskey, but not the whiskey everyone else was making. The climate in Seattle and Washington state lend to maturation conditions favourable to malt, and different than that of Kentucky or Tennessee. With a background in craft brewing, the founders Jason and Micah decided not to build a brewery, but to partner with good breweries for the wash. They make their wash at three different breweries. They use brewer’s yeast for flavour, not yield. The wash is fermented onsite at the distillery, and their ferments are incredibly long; 7 days fermentation at 21 deg C and then a further 2 weeks at 2 deg C. NOSE Rich and malty, with aromas of dark orange marmalade on toasted bread, Hints of leather, aromatic cedar, and woody spices. TASTE Rich and mouth filling. Spicy with oak,, toasted granary bread toast, orange oil, and hints of coffee and chocolate. Leather and citrus pith linger in the long finish
