Though not declared on the label, “Orkney” bottlings from Signatory are widely known to originate from one of the islands’ most celebrated distilleries. These whiskies are prized for their gentle, heathery peat, honeyed malt, and coastal purity.

Nose:
A graceful interplay of soft peat smoke, heather honey, and toasted almonds, enriched by notes of dried citrus peel, golden raisin, and polished oak. The Palo Cortado influence adds subtle walnut, leather, and orange to the bouquet.

Palate:
Silky yet powerful, with flavours of honeyed malt, roasted nuts, and spiced orange. Mid-palate brings richer tones of dried fruit, cocoa, and gentle smoke, supported by savoury sherry depth. The 100 proof strength enhances both structure and vibrancy, highlighting the distillate’s coastal freshness.

Finish:
