Achaval - Ferrer Cabernet Sauvignon

Achaval-Ferrer is one of Argentina’s benchmark producers, known for its focus on low-yield, high-quality vineyards and minimal intervention winemaking. Founded in the late 1990s, the winery has built a reputation for producing wines that reflect specific vineyard sites with clarity and precision.

The Cabernet Sauvignon is sourced from carefully selected vineyards in Mendoza, often at elevation, where warm days and cool nights promote full ripening while preserving acidity and structure. The winery is known for working with low yields to achieve concentration and depth.

Fermentation is carried out with attention to gentle extraction, followed by ageing in French oak barrels (a portion new) to integrate tannins and enhance complexity. The style leans toward a refined, structured expression rather than overt ripeness.

Tasting Notes
Colour: Deep ruby with garnet hues
Nose: Aromas of blackcurrant, blackberry, and plum, with notes of graphite, cedar, spice, and subtle herbal undertones
Palate: Medium- to full-bodied, with firm yet polished tannins and balanced acidity; flavours of dark fruit, cocoa, and mineral notes add depth
Finish: Long and structured, with lingering dark fruit, spice, and a refined savoury edge

Cellaring & Pairings
Suitable for mid- to long-term cellaring; drink now with decanting or cellar for 8–12 years.
Pairs well with grilled steak, lamb, and roasted meats, as well as rich dishes and aged cheeses. Also complements dishes with bold, savoury flavours.
