Castellare Chianti Classico

Castellare di Castellina, located in the heart of Chianti Classico near Castellina in Chianti, is one of Tuscany’s most respected estates. Founded in the 1970s through the consolidation of several historic properties, the winery has become known for its commitment to traditional Tuscan varieties and minimal use of international grapes.

The Chianti Classico is predominantly Sangiovese, often complemented by small amounts of Canaiolo. The vineyards sit at moderate elevation on limestone and marl-rich soils, helping produce wines with freshness, aromatic complexity, and structure.

Winemaking focuses on preserving varietal purity and terroir expression. Fermentation takes place in stainless steel with controlled extraction, followed by ageing in a combination of neutral oak and small barrels, allowing the wine to gain texture and complexity without excessive oak influence.

Tasting Notes
Colour: Bright ruby with garnet reflections
Nose: Aromas of cherry, red currant, and plum, with notes of violet, dried herbs, tobacco, and subtle spice
Palate: Medium-bodied, with vibrant acidity and refined tannins; flavours of red fruit, earth, and savoury herbs are balanced by subtle oak and mineral notes
Finish: Long and elegant, with lingering cherry, spice, and earthy complexity

Cellaring & Pairings
Enjoy now with decanting or cellar for 6–10 years to allow further integration and development.

Pairs well with grilled meats, tomato-based pasta dishes, and roasted poultry. Also complements mushroom dishes, charcuterie, and aged cheeses such as Pecorino Toscano.
