Emile Pernot Absinthe Vieux Pontarlier

Tasting Notes: In the glass Vieux Pontarlier is a fine, medium peridot green color. The louche forms gradually, and is lightly milky with opalescent reflections. The aromas evolve after pouring, starting with a bright anise and developing heady alpine herb notes with savoury, lightly mentholated hints of wormwood. The initial taste is intense and spicily piquant, with round  herbal flavors cradling the wormwood and a long, refreshing, cooling finish of anise and fennel seed. The Emile Pernot Distillery is considered one of the worlds top producers of high quality absinthe. Founded in 2001, the distillery crafts absinthes in small batches using specially designed 100 year old alambic stills. The Vieux Pontarlier is made using Pontarlier wormwood (Artemisia absinthium), which is considered the most fragrant in the world, Provencal fennel seeds, green anise seeds and a variety of additional aromatic herbs and spices. Produced traditionally, no sugar is added.
