Ollieux Les Indigenes Toujours Cinsault

Artisans Partisans is rooted in the Bories family heritage and Château Ollieux Romanis, a historic organic estate in the heart of Corbières-Boutenac in southern France. The Les Indigènes range focuses on purity, natural expression, and terroir-driven wines made with minimal additives and native yeasts.

Toujours is made from 100% Cinsault, a grape often used in blends or rosé, but here given the spotlight as a light, aromatic red. The vines are grown on arid limestone-rich soils scattered with pale stones, with a mix of young and older plantings bringing both freshness and depth. Grapes are gently destemmed and crushed before fermentation in stainless steel, guided entirely by native yeasts. The wine is made without oak, with no sulphites added during fermentation and only a light touch before bottling if needed.

Tasting Notes
Colour: Bright, translucent ruby with a youthful red-fruited hue.

Nose: Lifted aromas of crushed red cherry, cranberry, pomegranate, bruised strawberry, white blossom, soft herbs, and sweet spice.

Palate: Light, juicy, and energetic, with fresh red fruit, delicate tannins, bright acidity, and a subtle savoury-herbal edge. The texture is refined and easy-drinking, with a natural, vibrant feel.

Finish: Delicate and chalky, with lingering notes of kirsch, red berries, soft spice, and herbs.
