Corte Pavone is an organic estate in Montalcino owned by the Loacker family, known for its commitment to biodynamic and sustainable viticulture. The estate focuses on expressing the diversity of Montalcinoโ€™s terroir through careful vineyard management, low-intervention winemaking, and parcel selection.

Rosso di Montalcino is made exclusively from Sangiovese Grosso, the same grape used for Brunello di Montalcino, but with shorter ageing requirements and a more approachable style. The vineyards benefit from varied elevations, galestro soils, and the warm yet balanced climate of southern Tuscany, allowing for ripe fruit alongside vibrant acidity.

Fermentation is carried out with gentle extraction to preserve freshness and aromatics, followed by ageing in oak vesselsโ€”typically larger casks or neutral barrelsโ€”to soften tannins while maintaining varietal purity and site expression.
