San Michele is a producer in the Veneto region of northeastern Italy, where Amarone della Valpolicella is crafted using the traditional appassimento method. This process involves drying harvested grapes for several months before fermentation, concentrating sugars, flavours, and structure.

Amarone is typically made from indigenous varieties such as Corvina, Corvinone, and Rondinella. Vineyards in the Valpolicella hills benefit from moderate alpine and Adriatic influences, helping preserve acidity despite the wine’s richness.

After drying, the grapes are gently pressed and fermented slowly due to the high sugar concentration. The wine is then aged in oak barrels—often for several years—to integrate tannins and develop complexity. The resulting style is intense yet balanced, combining richness with freshness.

Nose: Intense aromas of dried cherry, blackberry, and fig, with notes of cocoa, spice, tobacco, and dried herbs
