Chateau Lavernette Granit Cremant

The chateau and estate were originally the property of the monks of the abbey of Tournus. They became the seigniory of Lavernette in 1596. The vineyards were already a part of the domain grounds and at that time, existed a “tinailler” (wine storehouse) containing two presses and four large tanks. Today the property of Chateau de Lavernette, located in southern Burgundy belongs to the de Boissieu family, descendants of the Lavernette family. It is at the crossroads of the Mâconnais and Beaujolais wine regions between the villages of Leynes and Chaintré. Since 2007, Xavier, the son of Bertrand and Anke, and Kerrie his wife, work all together on the family estate by combining their qualities, experiences and knowledge to produce high-class wines. The vineyard is cultivated according to the techniques of organic farming since 2005 in order to respect the environment and to create wines that reflect their terroir. Reconversion to organic and biodynamic viticulture since 2007; certification ORGANIC and DEMETER. GRANIT comes from Beaujolais Villages grapes (100% Gamay). It is a blanc de noirs sparkling wine. (the color is almost white even though it was produced with red grape varieties). It is harvested in crates a few days before the rest of the vineyard in order to maintain good acidity. The base wine is obtained after pressing the whole bunches at low pressure. Once vinified, the base wine is ready for printing (addition of yeast and sugar then bottling). It ferments in the bottle (this is called prize de mousse) and ages for a minimum of 8 months before being ready for disgorging (separation of the deposit due to dead yeasts with the wine) and addition dosage liqueur (choice of wine more or less sweet depending on the area). We do not add dosage liquor for GRANIT, that is why we call it BRUT NATURE. (Dry wine) This manufacturing method is known as the “champenoise method” or “traditional method. » This is probably the most restrictive method of making sparkling wine, but also considered the most qualitative. Festive wine, celebratory wine, unique wine, wine of pleasure and discovery…. Granite begins to surprise with its particular color; white and clear with what we call a very subtle pink eye. The nose is fresh, pleasant and delicate. Flavors of red and white fruits mingle with each other like a good freshly picked fruit salad. The bubbles are soft, without aggressiveness and the texture in the mouth is slightly velvety as if we had wanted to add whipped cream to our salad but without the sweet flavor. Granit is a wine full of surprises and seems to have an excellent future.
