In 2020, a murmur went through the wine world. Until then, Prosecco was only known in one color. White. But in 2020, a rosé was also allowed to be pressed for the first time. The rules for a Prosecco Rosé are extremely strict. Only the red Pinot Noir grape variety, which operates under the name Pinot Nero in Italy, is allowed to supplement the white Glera grape, which is mandatory for the sparkling wine from Veneto. And that only up to a maximum of 15 percent! Many winemakers balked at the new strict rules, but Mario Caramel enthusiastically threw himself into the rosé project for his Casa Canevel winery. The grapes come from his prestigious vineyards in the Valdobbiadene area, where the best Prosecco foamers come from. The first fermentation took place at low temperatures to preserve the freshness of the fruit. Caramel also proceeded with particular care during the second fermentation, so that the carbon dioxide bubbles were particularly fine. All these efforts have paid off, because the Casa Canevel Prosecco Rosé Brut shines not only with its fascinating pale salmon-pink color, but also with its seductive notes of raspberries and strawberries, but also with its radiant elegance, which above all celebrates the palate occasions and as an aperitif.
