The 2021 vintage in Paso Robles was marked by low yields and excellent fruit concentration due to a warm, dry growing season. Consistent daytime warmth paired with cool evening breezes from the Pacific helped preserve acidity while achieving full phenolic ripeness. These ideal conditions produced a vintage known for powerful aromatics, ripe fruit expression, and elegant tannin structure, making 2021 an outstanding year for Bordeaux-style blends.

Tasting Notes & Serving Suggestions:
Lush, polished, and deeply expressive, offering aromas of black cherry, blueberry compote, and plum, interwoven with notes of vanilla bean, mocha, and baking spice. On the palate, it’s full-bodied and smooth, featuring layers of ripe dark fruits, espresso, and toasted oak, framed by velvety tannins and balanced acidity. The finish is long and silky, with lingering notes of cocoa and warm spice.
Serve at 16–18°C (60–64°F) in Bordeaux-style glasses to enhance its aromatic depth and smooth texture. Decant for 45–60 minutes if drinking young to fully open the bouquet. Excellent pairings include grilled ribeye steak, braised short ribs, roast lamb with rosemary, or mature cheddar. Enjoy now for its opulent fruit character or cellar for 7–10 years.
