This classic blend of Grenache, Syrah and Carignan is sourced from pebbly soils with plentiful limestone deposits. Expect a rich, complex wine, with ripe black fruit, smoke, herbs and a characterful garrigue note. A wine that will continue to evolve well into the mid-’20s and will be great tonight with rare steak or grilled rabbit.
Nose: Rich palette of black fruits, licorice, truffle and black olive.
Mouth: Offers power, volume, density and a solid structure, with lots of freshness, elegance and already silky tannins. A fleshy and racy wine.
The work begins in the vineyard with a selection of the most suitable plots to produce this type of wine. Most of the grapes are harvested manually. A double system of sorting is carried out in the vineyard and in the cellar. The vinification is traditional and the grapes are destemmed before the maceration phase which lasts between 3 and 4 weeks. The grapes are then pressed and the malolactic fermentation begins. A third of the wine is aged for 9 months in barrels, the rest being kept in tanks.
