Caves Bailly Lapierre, located near Auxerre in Burgundy, is a specialist producer of Crémant de Bourgogne, operating out of historic underground limestone quarries that provide ideal conditions for ageing sparkling wines. Founded in 1972, the house focuses exclusively on traditional method sparkling wines, adhering to the standards of the Crémant de Bourgogne appellation.
