Château Haut Boutisse 2021 Saint-Émilion Grand Cru

Haut Boutisse comes from right-bank Bordeaux (Saint-Émilion Grand Cru), where Merlot dominates the blend, often complemented by Cabernet Franc and smaller amounts of Cabernet Sauvignon or Carménère. The 2021 vintage on the right bank faced spring frost and a challenging season, but top estates achieved balanced ripeness with good freshness. As reported, the wine will “bring together acidity, jammy black plums and a core of dryness” for future development.

This wine opens with aromas of black plum, blueberry, and violet, layered with subtle notes of cedar, smoke, and licorice. On the palate it is medium-bodied with refined structure: rich dark fruit, smooth tannins, and bright acidity give it both depth and freshness. The finish is long and elegant, showing a mineral backbone and savoury hints of herb and tobacco.
This 2021 Haut Boutisse is best enjoyed from 2026 through 2034, with a particularly good period between 2027–2032 when fruit and structure harmonise. It is approachable now with decanting, but will reward patience.
