Dalwhinnie 2008 14 Year Old North Star-Oloroso Sherry Hogshead Cask

The approachably sweet and sticky character of Dalwhinnie single malts is the result of an extensive process of mellowing their robust and sulphurous new make. This rustic spirit character is borne out of a distillation process which involves relatively little copper contact, with simple pot stills and worm tub condensers. This whisky, from independent bottlers and blenders, North Star, has undergone this transformation over the course of its years in cask. Spirit distilled at Dalwhinnie distillery in March 2008 was filled into a single refill hogshead for maturation. The whisky was later racked into an Oloroso Sherry hogshead to finish, before bottling in November 2022. This cask yielded 252 bottles of unchillfiltered, naturally coloured whisky at the selected strength of 48.9% abv.
