The 2021 Trueman Cabernet Sauvignon hails from the Hickinbotham vineyard in Clarendon, in McLaren Vale. It is truly one of the lovely vineyard areas in Australia...the wine feels structural and velvety at once. You get cassis, raspberry compote, dark chocolate, tobacco, licorice (salted black cats!), cardamom and mulberry off the bush in summer. The 2021 vintage in McLaren Vale is considered exceptional. A cool, wet winter provided excellent soil moisture reserves, followed by a mild, even ripening season with minimal heat spikes. The extended hang time allowed Cabernet Sauvignon to achieve full phenolic ripeness while retaining fresh acidity and aromatic lift. The resulting wines are elegant, concentrated, and perfectly balanced, with strong potential for long-term aging.

Tasting Notes & Serving Suggestions:
The 2021 Hickinbotham Trueman Cabernet Sauvignon is a refined and powerful expression of McLaren Vale Cabernet. Aromas of blackcurrant, plum, and blueberry are framed by layers of graphite, cedar, and bay leaf. On the palate, it’s full-bodied yet poised, with flavors of cassis, dark chocolate, and tobacco, supported by fine, chalky tannins and vibrant acidity. A long, structured finish reveals subtle notes of spice and crushed stone minerality.
Serve at 17–18°C (63–65°F) in large Bordeaux-style glasses. Decant for 1.5 to 2 hours when young to fully open its aromatics and soften the tannins. Best paired with chargrilled ribeye steak, braised lamb shanks, venison stew, or aged cheddar. Enjoyable now with proper aeration but will continue to evolve beautifully over 12–15 years.
