Warm, sunny days paired with cool Andean nights preserved vibrant acidity and balanced sugar levels. These conditions produced Cabernet Sauvignon with bright fruit purity, soft tannins, and fresh, elegant structure; a standout vintage for approachable yet expressive wines.

Tasting Notes & Serving Suggestions:
The 2021 Los Clop Cabernet Sauvignon delivers a bold, fruit-driven profile with aromas of blackcurrant, plum, and ripe blackberry, layered with subtle hints of vanilla, cedar, and sweet spice. On the palate, it is medium- to full-bodied, offering flavors of dark cherry, cassis, and mocha, supported by smooth tannins and lively acidity. The finish is lingering and balanced, with notes of toasted oak and dark chocolate.
Serve at 16–18°C (60–64°F) in Bordeaux-style glasses to highlight its dark fruit character and smooth texture. Decant for 30–45 minutes if drinking young to enhance aromatics. Excellent pairings include grilled ribeye steak, slow-braised short ribs, roast lamb, or aged cheddar. Best enjoyed now for its freshness but can age gracefully for 5–7 years.
