William Fevre 2022 Chablis Domaine

The 2022 vintage in Chablis marked a return to balance after recent years of frost-impacted yields. A mild winter was followed by a warm, dry summer, with a few isolated storms that refreshed the vines without causing damage. The season produced healthy, ripe grapes with excellent balance between sugar and acidity. Thanks to the cool nighttime temperatures, freshness was preserved, and the wines show lifted aromatics, ripe citrus fruit, and the classic minerality Chablis is known for.

Tasting Notes & Serving Suggestions:
Opens with crystalline aromas of green apple, lemon zest, chalk dust, and white flowers. On the palate, it is vibrant and linear, with flavors of grapefruit, crushed oyster shell, and pear skin, all wrapped in a mouthwatering acidity and taut mineral structure. There is no oak influence just clean, expressive Chardonnay that finishes with elegance and length, leaving lingering notes of citrus peel, saline, and flinty tension.
Serve chilled at 8–10°C (46–50°F) in medium-sized white wine or Chardonnay-specific glasses to highlight its aromatics and linear structure. Perfect pairings include oysters on the half shell, grilled prawns, lemon-butter sole, sushi, or goat cheese crostini. Enjoy now for its freshness or cellar for 3–6 years to allow subtle complexity to develop.
