Carefully selected for its distinctive flavor profile, this drink is distilled for a smooth, bold taste. Like the distillerys rye whiskey releases, Peerless single barrel bourbon is produced using a sweet mash rather than a sour mash. The Kentucky straight bourbon is bottled at cask strength without chill-filtration. Barrelled summer 2017 and bottled in fall of 2023 at 57.5% abv, this single barrel bourbon is non chill-filtered with no added colouring. This single cask is quite cherry forward on the nose, with hints of brown sugar coated citrus brulee, a faint grassy note, cedar, and biscuity, confectionary elements. The palate starts with a healthy dollop of oak, followed up by maraschino cherries, caramel, rye spice, and black pepper. its surprisingly smooth for 57.5% with no noticeable astringency or heavy tannins. The finish is medium length, and a bit of chocolate that starts to become noticeable right after swallowing really starts to take over the finish. Theres also a medley of coffee beans, leather, and drying oak throughout the finish, as expected from what Id describe as a very well done but not out-of-the-box Kentucky bourbon flavour profile.
