Nikolaihof Wachau, located in Mautern, is one of Austria’s most historic wine estates and a pioneer of biodynamic viticulture. The Saahs family has long championed minimal-intervention winemaking, spontaneous fermentation, and patient maturation, producing wines renowned for purity, individuality, and an often surprising ability to age. The name Hefeabzug refers to the wine being drawn off its lees before bottling. The 2024 is 100% GrΓΌner Veltliner, produced in a particularly light, dry style comparable in weight to the traditional Steinfeder category. The wine spends approximately six months on its lees, which contributes subtle texture and yeasty complexity while retaining the freshness and precision of the fruit.

Tasting Notes
Colour: Clear, youthful pale straw with subtle green reflections.

Nose: Fresh yellow and green apple, pear, melon, and citrus zest are joined by green herbs and classic white pepper, with delicate smoky and yeasty nuances emerging underneath.

Palate: Light- to medium-bodied, dry, and wonderfully energetic. Crisp apple and citrus flavours are supported by lively acidity, peppery spice, and a distinctive mineral-saline backbone. Lees ageing adds a gentle creaminess and texture without compromising the wine’s refreshing character.

Finish: Clean, dry, and mouthwatering, with lingering citrus, white pepper, minerals, and a subtle salty quality.
