“The Bivouac at 100 proof is made for the modern explorer and designed for those who toast nature,” said Luis Rivas Ball, American whiskey lead at Hotaling & Co. “Each bottle features a grid on the back label with exact batch specifications, as transparency is key for us at Hirsch.” Hirsch Innovation Distiller Kevan Aslan said, “For us, blending is an art that requires thoughtful attention to both the mash bill and proof. The Bivouac is the latest iteration of that approach, taking inspiration from the original A.H. Hirsch 16-Year-Old Reserve to create great balance in our make. Actual bivouacs are temporary, deliberate choices in setting up camp. This is the mindset we put ourselves in when developing The Bivouac.” The Bivouac is distilled in Bardstown, Kentucky and combines two straight bourbons with 95 percent of the blend distilled from a mash bill of 74% corn, 18% rye, and 8% malted barley. The remaining 5 percent is distilled from a high malted barley mash aged for at least eight years. Aslan’s distiller’s notes show the bourbon has aromas of cinnamon, vanilla, a hint of straw, and stone fruit on the nose. The taste features balanced sweetness with honey, subtle dark chocolate, and oak with a finish that’s clean with subtle hints of cinnamon and a lingering warmth.
