Produced at Kilchoman Distillery, Islay’s first new farm distillery in over 120 years, the Maury Cask Matured 2026 Edition continues the distillery’s reputation for innovative wine cask experimentation. Founded in 2005 by Anthony Wills, Kilchoman remains one of Scotland’s few fully farm-to-bottle distilleries, with a portion of its barley grown, malted, distilled, matured, and bottled entirely on Islay. This release was matured in specially selected Maury casks sourced from the Roussillon region of France, where the fortified red wine is renowned for its rich flavours of black fruit, chocolate, and spice. The cask influence complements Kilchoman’s distinctive peat smoke, adding remarkable depth and a luxurious sweetness without overshadowing the distillery’s coastal house style.

Tasting Notes
Nose: Aromas of blackberry compote, dark cherry, cocoa powder, peat smoke, espresso, raisin, toasted oak, and orange peel emerge alongside hints of sea spray and baking spice.

Palate: Full-bodied and richly textured with layers of dark chocolate, blackcurrant, dried fig, roasted coffee, smoked berries, cinnamon, vanilla, and earthy peat balanced by sweet fortified wine influence.

Finish: Long and warming with lingering notes of cocoa, charred oak, dried fruit, maritime smoke, black pepper, and gentle red berry sweetness.
