Cabernet (often Cabernet Franc or a Cabernet-led blend depending on the cuvée) performs well in Niagara’s cool-climate conditions, where a long growing season allows for gradual ripening while preserving acidity and aromatic complexity. “Looking Glass” reflects a modern Niagara style, balancing structure with freshness.
