The Red Cask Co. Caol Ila Olorosso

A 9 year Caol Ila, presented at cask strength and in its natural colour. The peated spirit went into the cask on the 29th of August 2013, and was bottled in early 2023 after a finish in a first fill Oloroso sherry hogshead. We thought this cask displayed delicious sticky sherry characters alongside long smoky bbq spice. Nose – An ashy, sooty Caol Ila with sticky charred marshmallows and bacon. Palate – Chewy big red fruits and oily soot. A hint of brine. Finish – Long festive BBQ spice. Tarry peat on the long finish.
